Ingredients
- 2 handfuls spinach, washed
- 1 package (~300g) konnyaku noodles
- ⭐ 1.5 Tbsp soy sauce
- ⭐ 1 Tbsp sesame oil
- 1 tsp sugar
- 1 carrot, julienned
- 1 small onion, sliced
- 1 small green bell pepper, sliced
- 1 green onion (or a few chives)
- seasoning mix
- 1 tsp paprika
- 1 clove garlic
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
Instructions

Boil konnyaku noodles and spinach together for about 5 minutes. Konnyaku smells, so this helps to get rid of that while making the spinach keep its bright coloring.

Drain water from noodles and spinach. In a bowl, mix them with ⭐ items (soy sauce and sesame oil). Set aside.

Stiry fry sliced vegetables (carrot, onion, bell pepper, green onion) together with seasoning mix.

Once onions are translucent, mix in noodles and spinach. Stir fry until noodles are hot. Season with salt, pepper, and soy sauce to taste.
Notes
Cooks up fast, so it’s good for a quick meal. Chopping takes time, though. Want to try adding shiitake next time! For non-vegetarian version, you can stir fry beef or chicken before vegetables. Konnyaku is high in fiber and low in calories so all-around win.
